EoMEoTE #4: Chorizo and rocket

I've been meaning to join in an EoMEoTE (End of Month Eggs on Toast Extravaganza) ever since I saw the first version way back in December last year. Eggs, toast... is this not the international brunch of choice? With limitless opportunities for culinary entrepreneurship? Brilliant, brilliant idea Anthony and Jeanne!

As usual though, time crept up on me so when I saw Julia's punctual post on her EoMEoTE for version #4 this morning, I shrieked and raced to the fridge to see what was available.

Toasted ciabatta with scrambled egg, chorizo and rocket

I love good chorizo.
I also love rocket.

Hello EoMEoTE #4!

I have always loved the taste sensation of chorizo oils soaking into crusty bread. This version had the bonus of spicy seared chunks of sausage contrasting with soft silky eggs and cut through with the peppery cleansing effect of rocket.

Mmm... Is it too early for sangria...?

I haven't even thought of what I was going to make yet. Hmmmm, better get moving! I need to run to the grocery store. I don't even have eggs in the fridge! =)

I hang my head in shame... I haven't even put upthe announcement yet and already you are posting!! Mea culpa, mea culpa... annoncement will go up tonight, round-up to follow at the weekend. I also ran to the fridge this mornign and shrieked - I had *no* eggs, what with beign married to the Protein Monster, aka a husband in serious rowing training... But we have now been grocery shoppign so watch this space for a fab contribution soon!

I have missed out yet another EoMEoTE! and another IMBB too! *cry*
I definitely need some sort of reminder system here. :p

The chorizo looks yummyyyyyyy! I love rockets too. I like the nutty flavour in it. I love scramble eggs too. And I love sausage of any kind! This is just my type of breakfast...er..Actually I would have it for brunch.

Hi Julia - *grin* It was true. I woke up bleary eyed all set to leave the house in an hour for the first ever Sydney bloggers yumcha...then saw your posting!

I cooked, plated up and photographed pretty darn quick!

Then gobbled it all up before racing off to yumcha and gobblings lots more!

I was never one of those gloating students who handed in their assignments early. This is quite a change.

Pink Cocoa: you most certainly are OK, the event is most accepting of laziness and tardiness - it is part of the founding ethos. I think we've had an entry that was a month late.

Of course, there are some half-way decent veggie sausages on the market...and I love any excuse to eat eggs!

Hi Stephanie - Glad you liked it. Veggie sausages are ok but the best bit about chorizo is the chilli-infused oil which leaks out! :P

I do love my sauteed mushrooms and scrambled eggs on toast too...
