Inspired--Tetsuya's salmon sushi

AugustusGloop's take on Tetsuya's salmon sushi
- Blend 1/2 a large avocado with 200ml of full-cream milk (vary to your creaminess preference).
- Add a pinch of salt and plenty of white pepper to taste.
- Make a small quantity of sushi rice by adding seasoned rice vinegar to freshly cooked short-grain rice. Aerate rice with a paddle and use a small fan to cool the rice until it is sticky and slightly glossy.
- Spoon a small quantity of avocado sauce onto a platter or bowl.
- Make a small mound of sushi rice to sit on top.
- Drape sufficient sashimi salmon slices sexily over the rice :P
- Garnish with chives.
- Ooh and ahh appreciatively before massacring the tower into an avocado bloodbath (an essential step according to Sensei Tetsuya).
- Consume with self-indulgent delight.

Hi bhr - Cheers. Must've absorbed some food styling tips by osmosis.
Hi veruca salt - Why thank you dah-link. The plate is an AG-original! :) Next stop the cover of Gourmet Traveller! haha :P

That's a rather ikebana-inspired sushi. Very lovely! :)
