Pineapple coconut muffins

I whipped these up tonight for our first-ever Sydney Sandwich Social tomorrow.
It was only as they were cooling that I realised these were a perfect entry for the latest Tiki-themed blog party. And with the deadline recently extended by another day, well, here I am... and here's the recipe.
Pineapple Coconut Muffins
2 cups plain flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup sugar
1/2 cup dessicated coconut
1 egg
1/4 cup vegetable oil
1/2 cup milk
1 teaspoon vanilla essence
425g tinned crushed pineapple
brown sugar to decorate
Preheat oven to 200C / 400F.
Sift flour then add baking powder, salt, sugar, and coconut and mix through.
Beat egg well then add oil, milk and pineapple and stir well.
Add wet mixture to dry ingredients and combine quickly. Take care not to overmix or the muffin will be dry.
Ladle spoonfuls into greased or lined muffin tins, about 3/4 full.
Decorate tops of muffins with brown sugar (I also added extra coconut and reserved some of the pineapple for the top).
Bake for about 20-30 minutes or until a skewer comes out clean.
Makes 12 medium-sized muffins.

I was fairly pleased with these although next time I might consider using white chocolate for extra chunky goodness. And I think demerara sugar and coconut flakes probably would've worked better too.
All it's missing is a shot of Malibu and a cocktail umbrella! =)

I agree; white chocolate would make this delicious-sounding muffins even better.
Watch for the round-up tomorrow night...and just toss you coat on the bed...it's the first door to the right when you come in!

Mmm...pineapple and coconut! I bet those muffins smell heavenly. Do you think a splash of rum might work here? You could then rename them pina colada muffins! :)

White chocolate always goes well in muffins I think. Esp when fruit is involved!
Hi Julia - Yes I did think about pina colada muffins but sensibility ruled. There's more of an alcohol hit if you drink it straight =)
Hi Nic - Hehe. Maybe a bit of Malibu sugar syrup to drench its way through?

Hae fun at the Sydney Sandwich Social tomorrow. I'm sure these muffins are going to be a hit. I just got back from Sydney yesterday - should've stayed a couple more days to check out the Sydney food blogging scene!

made these yesterday as mini muffins, at your suggestion i added white chocolate and used shredded coconut..i also used extra pineapple juice instead of milk ...i also forgot to use the oil...these turned out fab. my kids loved them, husband loved them and as they're low fat i really love them. nice recipe thanks!
