I made me a sandwich

tomato basil cheese sandwich

Ok so I have a thing for cheese, tomato and basil sandwiches, but how could you not? Sweet slices of ruddy red vine-ripened tomatoes, shavings of sharp vintage Cheddar and a generous handful of basil leaves combine for a lunch that is healthy and tasty.

A crusty fresh bread roll is my preferred canvas; a sprinkle of sea salt and several twists of freshly cracked pepper provide the final touches for a perfect Slashfood Sandwich.

In winter the cheese and tomato are melted on open bread slices under the grill, then topped with the fresh basil and sandwiched with another slice of toast.

Get more sandwiches at today's celebration of Slashfood Sandwich Day.
